Zucchini Invasion

Help!!!  We’ve been taken over by zucchini.

This was only one day’s harvest.  The “little” ones on the right are about 12″ long.  I’ve given some to the neighbors, made countless loaves of zucchini bread, and we still have all these left.

So, Kimmy, do you eat zucchini?  It’s white.  But then again, it’s green.  Hmmm, confusing.

SHHHHHH!  (Cue the scary music)

Their friends are in the garden.

They’re out there and they are growing.  Just waiting for me………

    We’ve got zucchini and crook neck squash out the wazoo. I freeze this savory bread for months and it’s still good (and so much yummier than sweet bread) http://www.dianaskitchen.com/page/bread/savorzuc.htm
    Plus, you can just use the skin since that’s really where the nutrients are and the rest is fodder for the compost/green waste bins!

    LOL You always only plant one zucchini plant. My grandparents had a neighbor who was just leaving garbage bags of it on people’s stoops at night LOL.

      I’ve dropped some off at the library, the pizza place, any one that will take them. We’ve even joked about taking them to the farmer’s market and just leaving them on someone’s table!

    What happened while we were at BlogHer? My zucchini went INSANE too! I actually hate to go out to the garden, because I know there will be more….but then if you don’t pick them that day, the next day they’re HUGE!

    If you don’t want to bake bread to freeze, my grandmother would grate her zucchini and freeze it in the serving sizes that her bread and zucchini cookie recipes called for. Come Christmas, you have all the zucchini you need.

    Really though. How can I be scared of a lil’ ol’ zucchini plant?

    I don’t think we’ve had dinner since we got home from Chicago that didn’t involve zucchini some how. Tonight I made panini with zucchini and cheese. I found my grandmother’s recipe for zucchini salsa, too, if anyone needs it, let me know!

    Only together can we fight this zucchini invasion. Stand strong sisters. ;)

      Panini? I hadn’t thought of that – yummy! I love panini. We’ve actually had discussions on whether we should go out to the garden or not – because they’re out there and multiplying!!

    I have been baking zuchinni bread and putting it in the freezer, We have eaten enough zuchinni bread that I am afraid most mornings to wake up for fear that they have multiplied yet again!!!
    I don’t even have a garden.. People keep bringing them to me.
    We will love the bread come winter. I am going to make the zuchinni cake from Pioneer Woman’s website on MOnday!. Can’t wait it looks yummy!

    Make bread and freeze for during the winner when you get hungry for it, make fries, casseroles and use for dipping in ranch dip, there’s so many ways to use it.
    Looking at it sure makes me hungry for it, we live in florida and no garden

    I know the feeling…we had that problem with squash earlier this summer…..couldn’t eat them, give them away….it was awful really! Everyone here had so many that I hate to think of how many were thrown out in our community.
