Chocolate Zucchini Fudge Cake

Attention Citizens!

It is safe to come out now.  You may return to your normal activities.  The Zucchini Invasion is FINALLY over!  We have made countless (yes, countless!) loaves of zucchini bread, given zucchini to neighbors, shredded and frozen it (48 cups!), and made Pineapple Zucchini Sheet Cake with Cream Cheese Frosting.  While the Pineapple Sheet Cake was very good, I think our favorite was the Chocolate Zucchini Fudge Cake.  Oh, baby, this was good.  I found both the Pineapple Sheet cake and the Fudge cake on Pioneer Woman’s Tasty Kitchen site.

The girls were gone and Michael got a rare chance to make something with just the two of us.  Poor third kid, he always has to share.  He did such a good job and we had so much fun!  And, what’s the best part of baking?  Licking the bowl, of course.  But, the little stinker wouldn’t let me take any pictures of him.  I got a few pictures, but then avoiding the camera became quite the game, as I stood behind and stuck the camera in front of him and clicked away.

Even though they are out of focus, I really like them because you can see how much fun he was having.

He finally relented, and gave me this one — which is my favorite.  It’s so cute, it almost makes me cry. Almost.

    Oh those pictures are adorable!! I can’t wait to do such things with my son! I have never made a cake with Zucchini.. I have heard of them but never made one. I might have to try it now! :D
