A Vegetarian Thanksgiving

Did you ever wonder what a vegetarian eats on Thanksgiving?  I get this question a lot, and thought I’d share with anyone that cares.  Here’s a picture of my plate on Thursday.

First of all, let me defend that gigantic mound of butter on the mashed potatoes.  The potatoes were really dry.  Really.  No, really.  Anyway, as you can see, we eat quite a bit of food, and it probably looks quite a bit like everyone else’s plate.  Starting at the top, we had Broccoli-Cheese casserole, Waldorf Salad, corn, mashed potatoes, rolls, and cranberry sauce.  We also had sweet potatoes, and sometimes have stuffing; but I don’t like either one of those.  Now, that thing in the middle?  It’s Quorn Turky Roast.  I’m sure you are thinking “YUCK!  A fake turkey roll?  You can’t be serious!”  But, it’s actually, really quite good; it tastes like turkey, and has the texture of turkey. Which is really weird when you first try it. My mother-in-law made this for us last year, and this was the first time I had cooked it.  There are two ways that you can cook it; I just put it in the oven, and unfortunately it was a little dry. But last year’s was juicy.  Again, really weird when you first try it, but it’s a great alternative.  We finished with pumpkin pie, of course.

So, there you have it.  By the way, please ignore the ugly, avocado green countertop that is held together with packing tape.  Isn’t that lovely?  That project is next on our list!

I hope everyone had a wonderful Thanksgiving weekend!

That looks so good. I am a weird one. I won’t eat meat cooked by anyone else, so that’s how my plate looked. Or just about.

Ok it’s late, I’m pregnant and hungry. You’re killing me! Yumm-o

Laura – Can I come over? I’m the only one here that likes pot pie, so I never get it. waaahhhh

  3. Lori says:

Karen R – Morningstar Farm Products are great! They’ve really expanded the line.

  4. Karen R says:

That looks about what we had for Thanksgiving except for the Quorn. I’m a vegetarian. I love Boca burgers and the Morningstar Farm products. The in-laws grilled a turkey.
I had plenty to eat without turkey.

  5. Kathleen says:

That looks good! I haven’t heard of Quorn, and I’d like to try it. We just had the side dishes at my in-laws, no turkey.

  6. Karen says:

Some traditions just cannot be improved upon. Sometimes the tried and true just work best. Why do we think we need to improve on what is served for Thanksgiving. I know those that are vegetarian or vegan need to make changes, but for the rest of us it seems this was the one meal of the year we look forward to and can count on for the traditional turkey, stuffing, mashed potatoes with gravy, sweet potatoes, green bean casserole, and cranberry sauce. Of course the pumpkin pie for dessert is a given.

My mother-in-law made us a tofurkey 2 years ago… It was not good. Since then, I make a vegetarian pot pie for our ‘main dish’. It’s yummy! Looks like you had a great feast too! :)

  8. Eryn says:

Don’t apologize for the butter! 1- everyone puts butter in their mashed potatoes when they make them, you just can’t see it. And 2- there’s no gravy on those tatoes, so I’m sure it balances out ;)

    Looks like a great meal!

  9. Lori says:

There’s just something wrong with eating something that has the word ‘turd’ in it! :>

  10. Kim says:

Now it feels so wrong that we had Turducken. A turkey stuffed with a duck stuffed with a chicken. At least I talked Ed out of doing it himself and he bought it that way ;)
